This blueberry cobbler makes for an excellent summer treat!
Ingredients:
Filling:
4 cups blueberries (fresh or frozen, I used fresh)
1/3 cup granulated sugar
1 tsp lemon zest
1 tsp lemon juice
1 tbs cornstarch
3 tbs butter
Batter:
3/4 cup granulated sugar
1 cup all purpose flour
2 tsp baking powder
3/4 cup milk
1/4 cup pure maple syrup
1 tsp vanilla extract
1/4 tsp salt
2 tsp cinnamon
Instructions:
1. Prepare the pan
Preheat oven to 350 degrees
Add butter to a 9x13 inch baking pan
Add pan to oven for 5 minutes to melt butter and coat the pan
2. Mix the filling
In a large mixing bowl, combine all filling ingredients.
Add to prepared baking pan
3. Make the batter
In a medium mixing bowl, combine dry ingredients and stir
Add in milk and vanilla extract
3. Bake!
Pour batter evenly over blueberry mixture
Bake for 35-40 minutes, or until top is slightly browned and cooked through.
Serve with vanilla ice cream (obviously!)
