Blueberry Cobbler

This blueberry cobbler makes for an excellent summer treat!


Ingredients:

Filling:

  • 4 cups blueberries (fresh or frozen, I used fresh)

  • 1/3 cup granulated sugar

  • 1 tsp lemon zest

  • 1 tsp lemon juice

  • 1 tbs cornstarch  

  • 3 tbs butter


Batter:

  • 3/4 cup granulated sugar

  • 1 cup all purpose flour

  • 2 tsp baking powder

  • 3/4 cup milk

  • 1/4 cup pure maple syrup

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 2 tsp cinnamon


Instructions:

1.  Prepare the pan

  • Preheat oven to 350 degrees

  • Add butter to a 9x13 inch baking pan

  • Add pan to oven for 5 minutes to melt butter and coat the pan


2. Mix the filling

  • In a large mixing bowl, combine all filling ingredients. 

  • Add to prepared baking pan


3. Make the batter 

  • In a medium mixing bowl, combine dry ingredients and stir

  • Add in milk and vanilla extract 


3. Bake!

  • Pour batter evenly over blueberry mixture

  • Bake for 35-40 minutes, or until top is slightly browned and cooked through. 


Serve with vanilla ice cream (obviously!)
